Try it yourself ... Beefy Burritos
Arlene will be cooking these tasty Beefy Burritos at the Clipper Homecoming festival in Londonderry, as part of her ‘buy local’ road show, where she will be cooking local products at different community events near Sainsbury’s 13 NI stores.
Beefy Burritos
Serves 4
Guacamole
1 ripe avocado, peeled and mashed
1 garlic clove, finely diced
1 shallot, finely diced
1 red chilli, deseeded and finely diced
Juice of 1 lime
Quick and easy salsa
4 large ripe Sainsbury’s basics tomatoes diced finely
1 small Sainsbury’s basics onion, diced finely
1 pack of coriander, finely chopped
Beef burritos
1 pack x 8 tortilla wraps by Sainsbury’s
500g Sainsbury’s N Irish lean steak mince
1 Sainsbury’s basics red pepper, diced
1 shallot, diced
1 clove of garlic, finely chopped
1 teaspoon ground cumin
1 teaspoon paprika
1 red chilli, deseeded and finely chopped
1 teaspoon tomato puree
50g basics full flavoured cheese grated, or other cheese if preferred
1 x pack basics salad leaves to serve.

Hide Ad1. Place a large frying pan over a medium heat and add a drizzle of olive oil. Slowly cook the red pepper, chilli, shallot and garlic from the beef burrito ingredients until lightly browned and soft. Add the teaspoons of cumin and paprika and stir.
2. Add the N.Irish beef mince and cook for around 10 minutes until browned. Add the tomato puree and stir. Cook for a further one minute. Remove from the pan to a warm plate.
3. Warm the tortillas one at a time in the pan for 10 seconds each side.
Add a generous spoonful of the beef mix and a sprinkling of grated cheese to each to tortilla and wrap. Serve with salad leaves, guacamole and salsa.
